Hi guys! Happy Wednesday! After a CRAZY week of traveling, I feel like it’s been so hard playing catch up with everything, so of course, instead of unpacking like I should be doing, I decided to share a blog post instead, haha.
When I blogged about my Hawaii trip here, I mentioned we had a LOT of delicious food (it was more of a cheat week than a cheat meal tbh), so today I wanted to share with you guys a healthier recipe that I had on my Instagram story before: Homemade acai bowls!
1 packet of pureed acai from Trader Joe’s
½ cup of frozen mixed berries
5 frozen strawberries
1 whole banana
1 bundle of spinach or kale
1 cup of unsweetened vanilla almond milk
½ cup of honey Greek yogurt (skip this if you are dairy free)
Sliced almonds (to top)
Coconut shavings (to top)
Honey (to top)
Sliced banana and or strawberries (to top)
Step 1: Pour all ingredients into a blender or Nutribullet and blend
*If the texture is not as smooth, add in more almond milk or yogurt
Step 2: Empty out into a bowl
Step 3: Sprinkle with as many toppings as you’d like
For fun: Sometimes I like to play around with the recipe! Add some peanut butter or granola on top to change up the taste.
